The restaurant was on the main drive of Palmyra, a small, tightly knit down of folks not necessarily accepting of change. Since the building was historic and highly visible, we needed to ensure the restaurant would be accepted and supported by the community. Furthermore, the price points for the restaurant had to remain accessible by the mostly blue-collar area as to not seem snooty or uppity. Doing this while maintaining a gourmet-quality experience would be difficult. Training, not only the staff, but the owners too would also pose a challenge.
